Ingredients:

  • 1 Tbsp. olive oil
  • 1 small onion, finely chopped
  • 3 cloves of garlic, minced
  • 3 green onions, chopped
  • 2 celery ribs, chopped
  • 1 sprig of fresh thyme
  • 1/2 tsp Italian seasoning
  • 2 medium zucchini, slice
  • 2 medium carrots, sliced
  • 1 (15 oz) can of white beans
  • 3 cups of vegetable broth
  • 1/4 tsp Cayenne pepper
  • Salt to taste

Directions:

  1. Heat oil in pot on medium heat. Add onion, garlic, green onion, celery, thyme, Italian seasoning and cook until onion is soft.
  2. Add zucchini, carrot, and white beans (you can rinse and drain the beans if you prefer), vegetable broth, cayenne pepper, and salt to taste.
  3. Bring soup to a boil. Reduce heat to simmer for 20 minutes or until it thickens. Mash some of the beans with a fork and it will help thicken the soup. Makes 6 generous servings. Enjoy.
