I made this less spicy than the other “walnut meat”. We don’t like too much spice at our house. Just add more chipotle, or add in chili powder or your favorite hot sauce to ramp it up if you like it hotter.

1 onion, sliced wide
1 t oil
3 cups walnuts
1 (14 oz can) garbanzo beans
2 T oil
1 T lemon juice
1 T paprika
2 t salt
2 t oregano
1 t cumin
1 t coriander
1/4 t chipotle

Sauté onion in 1 t oil until browned. Meanwhile put all other ingredients in food processor and pulse until ground meat texture. Add walnut meat to onions and warm through.
