This is a great potluck salad. Just add chips and dressing immediately prior to serving.
(Amounts in parenthesis are if you want to serve 10-12 – potluck amounts)
1/2 cup kidney beans (1 can)
1 tomato, chopped (2 toms)
1/4 cup sliced olives (1 can)
1/4 cup chopped green chilies(1 can)
2 cups lettuce, shredded (1 head)
2 cups corn chips (1 (11 oz) bag)
2 T salsa (1/2 cup)
2T Vegannaise (1/2 cup)
Drain and rinse beans well. Place in large bowl. Add tomatoes, olives and chilies. Add lettuce on top, without mixing. Mix salsa and mayo together. Keep separate from salad until ready to serve. Just before serving, toss chips and sauce into salad mixture. Serve immediately. Serves 4.
