Family Style Spaghetti with Roasted Pecan Balls
1c. pecans, chopped very fine
1c. bread crumbs
2 cloves garlic, minced
2 Tbs. ground flax seed
3 Tbs. chopped parsley
½ tsp. paprika
½ tsp. ground cumin
¼ tsp. onion powder
1/2 tsp salt
1 8-oz can tomato sauce
1/2 package WW spaghetti
14 oz prepared pasta sauce
Preheat oven to 350º F. In a bowl, combine the pecans, bread crumbs, 2 cloves garlic, flax seed, parsley, paprika, cumin, onion powder and ½ tsp. salt. Mix well and then add tomato sauce. Form the mixture into small balls (about 20) and place on an oil sprayed baking sheet and bake for 15 minutes. Remove from oven and set aside.
While pecan balls are baking prepare spaghetti according to package instructions. To serve, place spaghetti on plate, top with sauce and 5 pecan balls. Serves 4.
