Southwestern Slaw

1/2 red bell pepper

1/2 green bell pepper

1/2 cup corn

2 greens onions, sliced

1 Tbs. fresh parsley, chopped

1 clove garlic, minced

2 t lemon juice

2 t olive oil

Dice the bell peppers.  In a salad bowl, combine the bell peppers, corn, green onion, garlic and parsley and toss to mix. Add the olive oil, lemon juice and salt to taste (start with ¼ tsp.) and toss again.  Serves 2.
