Minestrone Soup

1 tsp. olive oil

1/2 onion, chopped

1 carrot, chopped

1 celery stalk, sliced

1 clove garlic, minced

1 (15 oz) can white (canellini) beans, drained and rinsed really really well

4 c. vegetable broth or water

1 small potato, chopped

1 c. kale, cut into strips ½”wide

½ cup corn

1 tomato, chopped

1/2 c green beans, cut into ½ pieces

1/2 tsp. salt

In a large pot, sauté onion, carrot, and celery in oil until tender.  Add garlic for 1-2 minutes and then add beans and 4 c vegetable broth.  Add potato, kale, corn, tomato, and green beans and simmer 30 min or until vegetables are done.  Add salt.  Makes 5 cups.
