Garbanzo Grain Bowl

 

1 1/4 cup boiling water

1 cup bulgur wheat

2 t oil

1 onion, chopped

2 small zucchini, in 1/2-inch chunks

2 garlic cloves, minced

1 t cumin

1 t coriander

1/2 t salt

2 tomatoes, in 1/2-inch dice

1 (15 oz) can garbanzos, drained and rinsed well

5 oz (4 cups) spinach

1 cucumber, in 1/2-inch dice

1 t dried dill weed

Put bulgur wheat in small bowl and pour boiling water over.   Let sit for 20 minutes.  Fluff with fork prior to use.

In large pan, sauté onion and zucchini in oil for 5 minutes.  Add garlic, cumin, coriander,and salt, and sauté one minute.  Add tomatoes, chickpeas, and spinach.  Cover and cook until spinach has wilted.  Serve in individual bowls starting with bulgur wheat on bottom, add sautéed mixture, then cucumber.  Top with dill weed.  Serves 4.
