This is what you have been smelling in the office recently. Here is the promised recipe!

1 t oil
1 large onion, chopped finely
3 garlic cloves, minced
2 T tomato paste
2 T curry powder
1 t coriander
1 red bell pepper, chopped
3 smallish potatoes, scrubbed and diced. Red potatoes work well
3 cups cauliflower, chopped into bite sized pieces
1 1/2 cups frozen green beans
1 (14.5 oz) can diced tomatoes
1 (15 oz) can kidney beans, drained and rinsed
2 bay leaves
1 t salt
1/2 cup frozen peas

Sauté onion in oil until softened, about 5 minutes. Add garlic, tomato paste, curry powder and coriander and sauté one more minute, until aromatic. Transfer to crock pot and add bell pepper, potatoes, cauliflower, green beans, tomatoes, kidney beans,bay leaves and salt. Add just enough water to not quite cover (usually about 1/2 cup). Cover and cook on high for 6-8 hours. Just before serving stir in the peas and remove the bay leaves. Serves 4
