This colorful salad is packed full of fiber and very easy to prepare. I love bringing it to potlucks. It is a great side dish to any meal. I also love to add a few tablespoons of it over a bed of mixed greens and make it a meal.
Ingredients:
- 2 cans of black beans, drained and rinsed.
- 1.5 cups corn kernels, fresh, frozen or canned.
- 1/4 cup red onion, minced.
- 1 red bell pepper diced.
- 1 avocado, diced.
- 1 jalapeño minced with seeds removed.
- 1/3 cup cilantro leaves chopped.
- 1/3 cup olive oil.
- 1/4 cup lime juice.
- 1 tsp chili powder, 1 tsp cumin.
- Salt and pepper to taste.
Instructions:
- Place black beans, corn, red onion, red bell pepper, avocado and jalapeño in a large bowl.
- In a small bowl, whisk together the cilantro, olive oil, lime juice, chili powder, cumin, and salt and pepper.
- Pour the dressing over the beans and vegetables. Enjoy! Serves 6.
